How was everyone’s weekend? Mine was great, except for the fact that Friday night we wound up in the ER (read more about it here). John’s stitches are healing perfectly and he gets them out tomorrow. He doesn’t even know they’re there which is a good thing! They’re right on his hairline so his hair covers them which is another good thing so other people can’t see them and think I’m a bad mom. Ha ha. Well, on to the reason you are really here. Scones. The best scones, to be exact. If you are looking for the perfect scone recipe, this is it! The scones stay perfectly moist and tender while the strawberries give them a sweet little kick. I topped mine with a delicious thick glaze which took them absolutely over the top!
These scones are perfect for a weekend breakfast or brunch with friends and family. I love how soft they stay for days! The only down side, is that the strawberries do get a little soggy, but they are still delicious! I definitely recommend baking them fresh if you are taking them somewhere or having guests over. Alternately, you can prepare all of the scones up until baking time, bake as many as you want for the day, and freeze the rest baking them off as you need them.
You can leave the scones whole like I did at first. But, then I realized they are a little too big so I cut them all in half and they were the perfect size. Nobody needs a scone that big!
The dough may seem a little wet at first, but once you move it around and pat it down on a floured surface, it should firm up a bit. It will still be sticky, but workable. If it is still too sticky, just add one tablespoon of flour at a time until it is a good, workable consistency. Be gentle, though, over-working the dough will result in tough scones!
So.. just make these.. ASAP!
