These tasty portable treats are so creamy, fresh and flavorful.
A few posts back I mentioned that once the hot weather hits, the first thing I think about is a cool, refreshing drink to keep my family and I cool in the heat. Wanna know the second thing that comes to mind? Popsicles! Popsicles are such a great way to beat the heat and are just so ideal for Summer! I mean, a creamy frozen treat all conveniently packaged on a portable stick sounds pretty perfect to me. Plus, these popsicles have one of my favorite flavor combos (do I say that a lot..?): strawberry cheesecake.
These popsicles are so creamy and SUPER flavorful and you know what? They are actually healthy! Healthy enough that I would eat them for breakfast and not feel bad about handing one over to my toddler first thing in the morning thanks to a special ingredient: Carnation Breakfast Essentials®. In this house, that glorious powder is a true staple. We usually keep all of the flavors on hand because we buy the variety pack, but my son’s favorite is the Rich Milk Chocolate. I decided to change up our usual routine and use the strawberry powder, which is Mike’s favorite, to create some yummy popsicles. It gives these popsicles an extra punch of strawberry flavor with the addition of fresh strawberries and a little bit of sweetness to brighten up the other flavors without having to add extra sugar.
^ Do me a favor and just pretend that you don’t see the spillage into the popsicle mold. Credit to my boyfriend, the pitcher pouring model. (I really need to invest in a tripod! Lol.)
Add everything to your blender, pulse until smooth and creamy then pour into your popsicle molds. Allow them freeze for abut 6 hours or overnight. Super simple and perfect for breakfast on the go, or if you want to trick your kids into thinking they’re eating a naughty popsicle when really they’re eating a vitamin + protein-packed popsicle! Each popsicle has about 53 calories, 5g sugar and 4g of protein. Feel free to enter the ingredients into a recipe nutrition calculator yourself, though.
