Look at that chewy caramel bite! Yum! I first tried these bars at a friend’s house. Looking at them, I thought meh. That these wouldn’t be that great. Well let me tell you, they are better than great – they are addicting! The buttery shortbread rust pairs perfectly with the creamy homemade caramel layer and the added pecans give it such a yummy flavor and texture! Gah, I just love these.
You’ll start these bars out by making the shortbread crust. Everything comes together quickly in one bowl and you’ll bake it up. The caramel layer is my favorite homemade caramel and is the only one I make! It is just so good. I use it for all my caramel dessert needs. The halved cashews will get sprinkled on top of the warm crust and the caramel poured and spread on top of them, securing them everrrr so nicely under there.
Allowing the bars time to set up is a pretty crucial step in the process or they will be too soft and gooey. The caramel is still gooey when they’re set up, but not overly gooey.
