These chocolate chip creme pies have two soft and chewy chocolate chip cookies filled with fluffy vanilla frosting!
Are you a fan of Little Debbie snacks? I don’t know abut you, but processed, pre-packaged snacks are a no-no for me. My boyfriend on the other hand, will eat ALL THE THINGS Little Debbie, Entenmanns, TastyCake.. you get it. Since he enjoys these snacks, sometimes I like to create them at home so I know exactly what he’s putting in his body. Kind of like how I made these oatmeal creme pies a while back for you guys.
The cookies in this recipe are an adaption of my perfect chocolate chip cookies, I just changed a few ingredients and the dough for these cookies, unlike the other one, doesn’t need to be chilled! For these cookie sandwiches you don’t need a super thick cookie, you want a flatter cookie so chilling isn’t required. They come out soft in the center and the edges are a little chewy, so perfect for cookie sandwiches!
In the center I made a fluffy vanilla frosting that’s not too sweet so it’s not over-powering. The kids will love these! What did wouldn’t want a cookie sandwich?!
