Hey guys! I’m popping in this morning to share a deeee-lish recipe with you before heading off to my sweet friend Brittany’s baby shower. I don’t know why I love these things so much, I think it’s so much fun seeing everyone come together giving lots of gifts to celebrate a new little life and mommy(and daddy)-to-be. They’re having a boy and I just can’t wait for our boys to grow up together!

Now, onto the real reason you’re here… Cinnamon Sugar Pull Apart Bread.

I shouldn’t even need to say more! This is one of my favorites. It reminds me of cinnamon rolls – yumm. Also, if you like monkey bread this is essentially the same thing, just in bread form. And if you follow this blog, you know just how much I adore cinnamon AND cinnamon rolls so you know I am ALLLLL over this bread. I’ve actually been wanting to make a pull apart bread for some time now but just haven’t gotten to it.. Until now. Bestdecisionever.

The dough is lightly sweet with a perfect, soft and fluffy texture. The cinnamon sugar-filled center gets all gooey and delicious from all of that incredible filling in between the layers! I seriously am just so obsessed with this bread. Just gimme #cinnamonallthethings. The flavors are ridiculous! Plus, it’s fun to eat. Pulling apart the layers and waiting in anticipation to see the gooey inside is my favorite part!

The best part though? Glazing this baby with a thick vanilla glaze! Vanilla glaze is my favoriiiite. I glaze pretty much everything in it. From danishes to monkey bread to muffins, to scones, it’s delicious and the perfect icing on the cake bread!

To make this bread, prepare the dough as stated in the recipe, easy peasy. Once it is ready to be rolled out, roll it out, brush melted butter on, and then the cinnamon sugar on top of that. Cut strips into the rectangle, like this: Cinnamon Sugar Pull Apart Bread - Sprinkle Some Sugar

Then, stack the strips on top of each other. Cut the stack into 6-7 (almost) equal sections. Like this:

Stagger the stacks into a greased loaf pan and let it rise until doubled for one hour:

Bake the bread up until lightly browned on top, and there ya go! Delicious, gooey, amazing cinnamon loaded bread.

Cinnamon Sugar Pull Apart Bread

Yield: 1 9x5 loaf

Ingredients:

Dough
3/4 cup whole milk
2 1/4 tsp instant yeast (1 standard packet)
1/4 cup unsalted butter, melted
2 tbs granulated sugar
1 egg, slightly beaten
1/2 tsp salt
3 cups all-purpose flour
Filling
1/4 cup unsalted butter, melted
3/4 cup granulated sugar
3 tsp cinnamon
Vanilla Glaze
1/2 cup powdered sugar
1/2 tsp vanilla extract
1-4 tbs cream (or milk)

Instructions:

Heat milk until it reaches 105 degrees either on the stovetop or in the microwave. Stir in yeast packet and sugar and let it sit until the top becomes thick and frothy, about 3 minutes. Pour mixture into bowl of stand mixer and add melted butter, beaten egg and salt. Mix until combined. Add half of the flour and mix on low speed. Once combined, add the rest 1/4 cup at a time until the dough is sticky but workable and doesn't get stuck on your hands. Once dough is together, knead for another 5 minutes on low speed.

Work dough with your hands to form a ball. Grease a large bowl, or use the same bowl, and place dough in. Cover and set dough in a warm place until doubled in size, about 1 hour. I like to turn my oven on to 200 degrees, turn it off and place the bowl in there.

Once doubled in size, roll the dough out on a lightly floured surface into a large rectangle(ish) shape. Combine cinnamon and sugar in a small bowl. Brush on melted butter and cover in cinnamon sugar mixture. Cut dough length-wise into 5 long strips. Stack them on top of each other. Cut 6-7 sections across your stacks.

Grease a 9x5" loaf pan and loosely stagger your stacks in the pan. If they aren't snug to the edges of the pan, don't worry about it. It will bake up fine. If there is extra cinnamon sugar that spilled off while transferring the stacks into the pan, don't waste it! Sprinkle it on top of the dough in the pan. Cover dough with plastic wrap and allow to sit for 45 minutes to an hour until it doubles again in size.

Preheat oven to 350 degrees and bake for 22-27 minutes or until very lightly browned on top. Remove from oven, run a knife around the edges and allow to cool in pan for 20 minutes. During this time, whisk glaze ingredients together in a small bowl and set aside (add more cream/milk for desired consistency). Flip pan over and very carefully remove loaf and set on a large plate or platter. Drizzle glaze on top and serve! Bread is best served warm and fresh the same day.

Cinnamon Sugar Pull Apart Bread will stay soft and fresh for up to 2 days stored in an airtight container at room temperature.

    Instead of whole milk, can I use butter milk? The reason I ask is because I made cinnamon buns during the summer and froze a batch of butter milk. So I don’t want it to go to waste.

    This looks amazing. In the instructions it says to stir yeast and sugar into warm milk.
    Then the next step says to add melted butter, SUGAR, etc…
    I only see the 2TBS of sugar listed that I already mixed in with the milk.
    Hopefully there is no second round of added sugar because I am making this right now.

    I’d like to make this, but am unsure if I’ll have the time the night of – what would you suggest? I thought of making the dough ahead of time, letting it rise, cutting and cinnamon-ing and then putting it in the fridge. Then letting it rise the next day, but I know that would also take more time than the 45 minutes…?
