This super healthy juice is sweet, tart and so amazingly delicious!
Here's a little change of pace you guys.. I know, I know. I'm going from frosted brownies - to chocolate cake - to rice krispie treats and now to a super healthy juice. Just bare with me, k? 🙂 Being a food blogger, it's kind of hard to eat healthy. Normally, when I make a recipe I will just sample it and make sure it tastes good each time I test it and then I either give the treats away to the neighbors or my family eats them (sorry guys). Unless they are THESE, then all self control goes out the window!
Since the weather has been so amazing the past few days here in NJ, I've been craving fresh juices like this. When I'm trying to get back on track, this energy beet juice is my absolute FAVORITEEEE and the {only} one I will drink because I can't do those green juices. I just can't. BUT, if you do want your greens too, I have made this juice in the juicer and then poured it in a blender with some greens and blended it up really good and it tastes amazing! So if you want to add some greens, try that method. This juice is super healthy and so ridiculously good for you. Isn't the color so captivating?! I didn't edit the pink-ness of these photos - that's really how pink it is. Not only will this drink make you feel good, but the bright color alone makes me feel good in itself! Also, pretty food just tastes better.
If you want to start getting into juicing, give this juice a try! It is nice and sweet from the apples and carrots, a little tart from the lemon juice, you get a little zing from the ginger and the parsley gives it such a nice flavor. Don't shy away from the parsley! It's so good. I don't like the flavor of beets too much on their own, but all of these flavors on top of it completely masks the taste and you still get the benefits!
Energy Beet Carrot
Ingredients
- 2 beets peeled or washed very well
- 2 large carrots
- 2 golden apples
- juice of one lemon
- 1 " piece ginger root
- 6 parsley leaves
Instructions
- Chop up all of your produce. Juice all ingredients in your juicer according to manufacturer's instructions. Juice is best drank immediately.
- If you don't have a juicer, I have also used a blender with great success. Add all ingredients to your blender and blend EXTREMELY well, 3-5 minutes. Push everything through a fine mesh sieve, making sure to squish all of the juice out and discard the pulp.
Notes
For easy juicer clean-up, place a plastic grocery bag in the pulp container to contain all of the pulp. You can just throw the bag away when you are done instead of having to clean another part.
