This pie is such an interesting recipe! It was featured in the 1988 edition of Homemade Good News Cookbook. I just love finding and making vintage recipes! So much history there. Yeah, I’m a nerd.

To make this no-bake raspberry ice cream pie, you’ll prepare the corn flake crust first and chill that in the refrigerator while you prepare the filling. The filling comes together on the stovetop and I think one of the most interesting steps is that the ice cream is melted into the filling on the stove! I thought that was so cool and really gave the filing so much delicious flavor.
