You guyyyysssss. This cake. This cake is something magical. Even banana haters will enjoy this (aka me). The caramelized brown sugar and butter mixture that gets spread on the bottom of the pan, ultimately becomes the top of the cake when you flip it over. It creates a gooey sweet layer that reminds me so much of bananas foster!
This cake is a fun and different spin on a pineapple upside down cake. Obviously this is waaay better. Once the brown sugar + butter mixture is spread into your greased pan, you’ll cut up a bunch of banana rounds and place them all around the pan until its filled. The batter gets poured on top, being sure to press it down slightly so it sinks between the banana slices. Once it’s done in the oven, you ONLY want it to cool for five minutes or else you run the risk of the caramelized layer sticking to the bottom of the pan instead of staying on the cake.
