Indulge yourself in these outrageous Strawberry Shortcake Pancakes! My favorite fluffy buttermilk pancakes are filled with bits of juicy strawberries, and topped with layers of fresh strawberries, vanilla whipped cream and a delicious sweet strawberry sauce to top it all off.

You know what’s around the corner, don’t ya? Valentine’s Day! How amazing would it be to surprise your hubby or wife with a stack of this deliciousness for breakfast in the morning. I mean come onnnn, I definitely wouldn’t complain.

To make this recipe, you’ll start off by making strawberry liquid gold aka syrup. Just strawberries and sugar go into a saucepan and they’re heated until their juices are released and is nice and thick. You can also use frozen strawberries for this recipe. I had an abundance of fresh strawberries in my fridge and wanted to use them up which is the main reason this recipe was born! You’ll want the sauce to cool slightly because it’ll keep getting a little thicker as it cools. Tip: strawberries sand sugar alone won’t make a super, super thick sauce if that’s what you’re looking for. If want it a little thicker, create a slurry of cornstarch and water and stir it into the boiling sauce.

Next up, fresh whipped cream! Nothing compares to homemade whipped cream. Nothing. In the bowl of a stand mixer with the paddle attachment, you’ll beat heavy cream to stiff peaks and then best in sugar and vanilla. Easy peasy and so freakin delicious.

For the pancakes, I’m using my tried and true favorite fluffy buttermilk pancake recipe, but with a sweet addition! They’ll have bits of juicy fresh strawberries in them. So good.

Assembly goes somethin’ like this:
Pancake
Whipped cream
Chopped strawberries
Pancake
Whipped cream
Chopped strawberries
Pancake
Dollop of whipped cream
Strawberry sauce all over the top!

You can even add the strawberry sauce in between the layers for an even more decadent treat!
