Summer is coming to an end SO soon and it makes me so sad. As much as I love wearing boots, scarves and drinking pumpkin spice everything, I'm just not ready to give up the beach yet! The mornings and nights are starting to get cooler and cooler as the days go by here in New Jersey, but luckily the days have been hot. On those hot days, you just need to be sipping on something. Anything from iced coffee (with my FAVORITE caramel syrup), peach sweet tea, or this amazingly delicious watermelon lemonade! I have wanted to make flavored lemonade for the longgggest time! I finally did before summer is over and I obviously had to choose the best summer fruit ever to go with the lemonade: watermelon. Plus, I had an abundance of watermelon that needed to be eaten. It's super refreshing, slightly sweet, slightly tart and the flavors go together beautifully! I mean, isn't it just the prettiest drink?
It's pretty simple to prepare and comes together so quickly. The only part that will take a little bit of your time (5-10 minutes), is straining the watermelon juice. At first, I only strained it through a fine mesh sieve and then I realized the watermelon pulp was floating around all over the place.. gross. Any kind of pulp just grosses me out, so I strained it again through a coffee filter to be sure I got every last bit out. If you don't mind pulp in your drink, you won't need to use a coffee filter. It's a little time consuming for those who are like me and have zero patience, but totally and completely worth the time. Alternately, you could use a cheesecloth to strain instead of a filter.
- 3 cups watermelon cubed
- ½ cup fresh lemon juice about 3-4 large lemons
- ½ cup + 2 tbs granulated sugar
- 4 cups water
- Start out by juicing your lemons until you reach about ½ cup of juice. Mix with water in a large pitcher and set aside. Place cubed watermelon and sugar in blender and pulse until it is completely liquified and sugar is dissolved. Strain watermelon juice through a coffee filter on top of a fine mesh sieve. This will remove all pulp from the juice. If you like pulp, feel free to leave out the coffee filter and just strain through the mesh sieve to only remove some. Once watermelon juice is strained, pour it into the lemonade mixture. Serve immediately.
- Watermelon lemonade is best consumed on the same day made. It will keep for one day in the refrigerator. Longer than that and the flavor will be compromised.
