Grease a 9x13 pan with non-stick cooking spray or line with parchment paper.
In a large pot, melt butter. Add 6 cups of marshmallows and stir until almost all the way melted. Pour in the cereal, toasted coconut, chopped cookies and caramel and stir until everything is completely coated. At the last few seconds, add in the remaining cup of marshmallows and stir so they only melt slightly.
Dump into prepared pan and press them down well.
Top the bars with a sprinkle of toasted coconut. Drizzle chocolate and caramel on top. Allow the chocolate to set a bit before cutting them into bars.
