This cinnamon sugar chex mix is crunchy cinnamon goodness. Seriously, I can not keep my hands off of this stuff! I have such a love for absolutely anything and everything cinnamon sugar-related. The sweet cinnamon sugar combined with the buttery cereal is so amazing! TOTAL taste bud explosion.
This chex mix is so easy and will take you literally 5 minutes to make! So easy and so perfect for those last minute "omg! we're leaving soon and I don't have anything to bring!" moments. That sure happens to me a lot and this is sure to be a favorite where ever you go! The best part is, if you have the cereal, you most likely have everything else on hand too! Just 4 ingredients: rice chex cereal, butter, granulated sugar and cinnamon.
I'm telling you, once you get a bowl of this in front of you, you will not be able to stop snacking!

Cinnamon Sugar Chex Mix
Ingredients
- 4 cups Rice Chex Cereal
- ¼ cup unsalted butter, melted
- ¼ cup granulated sugar
- 1 teaspoon cinnamon
Instructions
- Line a large baking sheet or plate with wax paper, parchment paper or paper towels. Set aside.
- In a large bowl, measure cereal and set aside. In another smaller bowl, measure cinnamon sugar, set aside.
- Melt butter. Pour over cereal and stir until all cereal is completely covered. Microwave for 2 minutes, stirring after 1 minute. Add cinnamon sugar one half at a time stirring extremely well between each addition. Microwave whole mixture again for 1 minute. Pour on to prepared lined sheet and spread out to cool.
- Store in an airtight container for up to 5 days.

My girlfriend made this at a party and holds the recipe hostage like a closely guarded secret. Delicious but some of the chex burned in the microwave. Is it supposed to be cooked at a lower power setting or is it a play around with it depending on the microwave?

Thank you so much! Just so you know this also works with Rice Crispies. I have been craving a quick easy gluten-free way to have something that reminded me of cinamon toast crunch cereal without the hassel of making my own gluten free dough!! Just add milk ( or your fav milk substitute) 10 minutes flat! Awesomeness.

I needed a snack to take to a girls night out. I didn't have Rice Chexs so l used Corn Chexs instead. They are delicious and l doubled the recipe! The girls will love these and l won't tell them it only took 5 minutes to make. Other non sweet cereals would be great l'm sure to.Thanks for a great recipe!!!!!!

try adding raisins. Mom used to make us cinnamon sugar raisins as a treat. I added raisins to this and it was amazing.

Hi There! Maybe my math brain is old but could you please clarify the amount of chex vs servings? It says 4 cups of chex but later that it makes 16 - 1/2 cup servings (which is 8 cups?). I just don't want to mess up the chex amount! Thank you : )

Hey Melanie, wow I'm surprised that with the amount of people who have made this, that you're the first one to catch that mistake, haha! Please disregard the serving suggestion, it should read 8 - 1/2 cup servings! Thanks so much for pointing that out to me. You will just need to measure out 4 cups of chex cereal to make this. I realize the serving suggestion is confusing though, so I may just remove it all together to avoid mistakes! 🙂
