Homemade soft pretzels are easier to make at home than you think. So soft, so buttery, they’re better than any food chain!

I have a slight obsession with soft pretzels. Where ever I am, if they are being offered, there’s a good chance I’m getting one.. or three. Call it a guilty pleasure but now that I can make the best homemade soft pretzels at home that are even better than any chain, my life is practically made!
Ingredients for Homemade Soft Pretzels
- Active dry yeast: It helps the dough to rise and makes the soft pretzels puff up as they bake.
- Water: Make sure your water is warm (not boiling), about 105°-115°F to best activate the yeast. You will also use boiling water for the baking soda bath later in the recipe.
- Baking soda: Used for the baking soda “bath” which is the most important steps in making homemade soft pretzels. This gives the pretzels their iconic golden, chewy outer exterior. It’s the ingredient that basically makes a pretzel, taste like a pretzel! And not a buttery, salted bread stick. ?
- Butter: I use unsalted butter in the dough and salted butter brushed on top of the pretzels just after baking. To simplify, you can just use unsalted since they are getting sprinkled with salt anyway. I like mine salty!
- Sugar: I use a small amount of white granulated sugar in this recipe.
- Fine and coarse sea salt: Fine is used in the dough – you can also just use regular table salt – and coarse sea salt is sprinkled on top of the pretzels before baking.
- All-Purpose Flour: Measuring the flour correctly is crucial. Too much flour and your dough will be dry and crumbly. Too little, and it will be wet, sticky and unworkable.
How to make quick and easy soft pretzels
- Mix and knead the dough: Combine yeast with warm water and sugar. Once mixture becomes “frothy” your yeast is ready. Stir in salt and melted butter. Add flour 1 cup at a time until dough is no longer sticky. You may need more or less than the recipe calls for. If you press your finger into the dough and it bounces back, it’s ready to knead! Knead dough for 5 more minutes until smooth and pliable.
- Let the dough rest: Shape dough into a large ball and place in a lightly-oiled bowl, cover with a damp towel, and let it rest for 15 minutes. This is not to be confused with rising, it does not need to be doubled in size, the dough is just “resting.”
- Preheat oven: To 475°F, and line two baking sheets with parchment paper.
- Prepare the baking soda bath: Combine the water and baking soda in a large pot and bring mixture to a boil. Take off heat and allow it to come down to a lukewarm temperature.
- Shape the pretzels: Flatten rested dough slightly with the palm of your hand into a circle. Cut dough into 8 sections (like a pizza). Roll each triangle into a long 3/4 inch rope, about 19-20 inches long. Shape dough into pretzel shape and place in baking soda bath for 2 minutes. Carefully pick pretzel up either by hand or spatula and transfer to prepared baking sheets.
- Add salt: Sprinkle the pretzels with coarse salt while still wet. Repeat these steps until all 8 pretzels are prepared and on the baking sheets.
- Bake: You want to bake the pretzels until golden brown, about 8-9 minutes.
- Brush with butter: Straight from the oven, brush the pretzels with melted butter. I like to use salted but you may use unsalted.
- Best served warm: Enjoy them fresh and hot out of the oven!
Frequently asked questions
Once cooled completely, wrap them up individually and tight in plastic wrap for up to two days. To reheat, pop them in the microwave for about a minute or so. Good as new!
I recommend preparing the dough only one day in advance. Prep the dough the day before following the recipe through to step 3 and store in the refrigerator until ready to use. When you are ready to make the soft pretzels, continue on with the recipe starting with shaping the dough then the baking soda bath, etc.
Once baked and cooled completely, wrap each pretzel individually in a layer of plastic wrap and then a layer of foil. Be sure to cover them completely! For extra protection and to ensure freshness, place them in a large ziplock bag before freezing.
Yes! Place raw dough into an airtight container for up to 3 months. Thaw in the refrigerator overnight.
Yes, yes, yesssss. When you get to the shaping step of the recipe, when you roll the dough into long ropes, just cut them into 1 inch pieces instead of shaping into a pretzel shape. Continue with the recipe as written. I also have this included in my recipe notes at the bottom of the recipe.
Why should you make these pretzels?
- They have an incredible slightly chewy exterior, while the inside is super soft and fluffy.
- The flavor is out of this world! I mean, they are bathed in butter as soon as they come out of the oven….
- No more standing in long lines and spending a crazy amount of money on one pretzel when you can spend that amount or less and make an entire batch!
- They’re easier to make than you think!
Variations
To use any of these variations, you will omit the coarse salt sprinkled on top after baking. Use your imagination! There are so, so many more variations you can come up with! ?
Cinnamon sugar: After baking, brush with melted butter and sprinkle with cinnamon sugar.
Everything but the bagel seasoning: Brush with melted butter after baking and sprinkle with seasoning.
Cheese: Before baking and while pretzels are still wet from baking soda bath, sprinkle with your desired flavor of cheese. Parmesan, asiago would both be absolutely delicious!
Garlic & herb: Brush with melted butter after baking and sprinkle with garlic salt and italian seasoning.

Homemade Soft Pretzels
Ingredients
- 2 1/4 tsp active dry yeast 1 standard packet
- 1 cup warm water
- 1 tbs unsalted butter melted
- 1 tsp sugar
- 1 tsp salt
- 3 cups all-purpose flour + up to 3/4 cup more if needed
2 cups water
- 4 tbs baking soda
- 1 tbs coarse salt for sprinkling on top
6 tbs salted butter, melted
Instructions
- Preheat oven to 475 degrees and line a large baking sheet or two baking sheets with parchment paper.
- Combine yeast with warm water and sugar in the bowl of your stand mixer fitted with hook attachment. Once mixture becomes "frothy" your yeast is ready. Stir in salt and 1 tbs of melted butter. Add flour 1 cup at a time until a dough forms and is no longer sticky. You may need more or less depending on temperature differences. If you press your finger into the dough and it bounces back, it's ready to knead. Knead dough for 5 more minutes until smooth and pliable.
- Form dough into a ball by hand. Lightly grease the bowl used previously and place the dough back in to rest for 15 minutes. Cover with a damp towel.
- In a medium sized pot, boil 2 cups of water with 4 tbs of baking soda. Once the baking soda is mostly dissolved, take mixture off heat and allow it to come down to a lukewarm temperature. Pour into a 9×9 baking dish once cooled down.
- After 15 minutes, take dough out of the bowl and flatten slightly with the palm of your hand. Cut dough into 8 sections (like a pizza). Roll each triangle into a long rope, about 19-20 inches long. Shape dough into pretzel shape and place in baking soda bath for 2 minutes. If the whole pretzel isn't covered by the water, spoon it on top of the areas is doesn't reach. Once the 2 minutes is up, carefully pick pretzel up either by your hand or with the help of a fork or spatula and place on prepared baking sheet. You may have to re-shape slightly.
- Sprinkle the pretzels with coarse salt while still wet. Repeat these steps until all 8 pretzels are prepared and on the baking sheets.
- Bake pretzels for 8-9 minutes or until golden brown. Immediately from the oven, brush (heavily) with 6 tbs of melted butter.
- These homemade soft pretzels are best served hot and fresh out of the oven but will keep for about 2 days stored at room temperature in an airtight container. Pop them in the microwave and they’re good as new!
Notes
- Make Ahead Instructions: Prepared dough can be made one day in advance. Shape the pretzels and allow them to rest for 10 minutes before popping them into the oven. Prepared dough can also be frozen for up to 3 months. Thaw frozen dough overnight in the refrigerator.
- Freezing Instructions: Freeze baked and cooled pretzels for up to 3 months. To reheat, bake (frozen) at 375 degrees for 15-18 minutes or until center is warmed through. You can also microwave for a few minutes until heated through.
- Pretzel Bites: When rolling dough into a long rope in step 4, instead of shaping pieces into a large pretzel, cut the dough into 1-2 inch pieces. Follow the rest of the recipe instructions.

That sounds delicious! You can place almonds and granulated sugar and pulse in a food processor to make a fine meal. Brush the pretzels with butter and sprinkle or dip the pretzels in the coating!

Hello. These look great. I do not have a mixer and am unable to go to the store to get one due to a broken foot. Am I able to knead and make the dough by hand?
Yes so easy Just needs a little elbow grease I start with a wooden spoon and once it’s about all mixed I sprinkle flour on the surface(I have s smooth counter but you can use a cutting board and flour my hands and start kneading till soft and smooth. You know your done when it bounces back when gently pressed.I cover with a large bowl because I have one if you don’t place in a lightly oiled bowl and cover with a oiled saran wrap till ready this will keep it from sticking.good luck!!

Yes, kneading by hand works great. I have made these 4 times so far all by hand and they are delicious. Only change I made was to add 1 tbsp of brown sugar along with the white. More of an Aunt Annie’s flavor.

Can you use a bread machine for the pretzels?
Yes, you can. On King Arthur Flour’s website where this recipe originated, they state, “To make dough with a bread machine: Place all of the dough ingredients into the pan of your bread machine, program the machine for dough or manual, and press Start. Allow the dough to proceed through its kneading cycle (no need to let it rise), then cancel the machine, flour the dough, and give it a rest in a plastic bag, as instructed above.”

My daughter loves soft pretzels with nacho cheese. We only have them when we go to the spendy carnival concessions. This would be a fun family activity, as well as much less expensive than waiting for the carnival.

Do you knead the dough by hand or in the kitchen aid?
I use my Kitchen Aid fitted with the dough hook attachment but I have done it by hand also for this recipe, it just takes a bit longer to get a perfectly smooth and pliable.
I’ve never tried myself so I can’t say for sure, but I think they will be fine to freeze! I would allow the ones you want to freeze to cool completely, then transfer them to individual, freezer-safe zip-loc bags and then freeze them like that. When it comes time to thaw them, just take them out of the freezer, preheat oven to correct temperature and bake for 5-10 minutes until they are done (in their frozen state). Hope this helps, Amanda. I have tried twice making pretzels and i give up. They stick to the wax paper, and are hard. Is there a trick to this.
Wax paper is not recommended for baking as it can melt or ignite in the oven at such a high temperature which could be why your pretzels are sticking. I have never tried baking with wax paper, so I am unsure that is just my guess. I would use parchment paper instead. Have you tried my recipe or you just are talking about making pretzels in general?

I just made these and they were delicious! I used margarine instead of butter, because I didn’t want it to be dairy. It was pretty quick and simple. I don’t have a Kitchen Aid, so I kneaded it by hand. They were just what I needed! Absolutely delicious and perfect with yellow mustard. The best homemade pretzels I’ve every had! Thanks for your sharing your yummy recipe. I just made a batch and they turned out great. The only thing I’m not sure about is the baking soda bath. Seems like an awful lot of baking soda for the amount of water? Mine Dissolved but then recrystallised as it cooled and seemed to give the bottom of the pretzels a bitter salty taste… I ate right past it though!
It does seem like a lot of baking soda, but in my experience and research that’s how much is needed to create the beautiful golden chewy exterior. I’ve never had a bitter salty taste, perhaps you kept them in a little too long? Either way, I’m happy you loved them anyway! 🙂
This is the worst pretzel recipe! None of your directions make any sense! No dough rises in 15 mins! 5 mins to knead the dough *scoff* now my pretzel taste like shit and are tough! Thanks for nothing! You tube had better instructions and made it easy to understand and make a good pretzel. You should delete this its very misleading.
I’m sorry you feel that way! If you had read the instructions correctly, it says for the pretzel dough to *rest* for 15 minutes, not rise. There is no need for the dough to rise. As for the kneading, yes, once the dough comes together, you knead for five minutes UNLESS you are kneading by hand. The instructions for kneading are for using a stand mixer fitted with a dough hook, I do not have instructions for making the recipe by hand. Also, before any recipe, especially one that uses yeast, you should always read the instructions one time fully before attempting so you have all the steps in order. Maybe you should have read the instructions more carefully or had someone read them for you because the instructions are pretty straight forward. Sorry you didn’t enjoy the pretzels. Made the pretzels would not recommend leaving them in the baking soda wash for 2 minutes gave it a really bad taste would just dunk and pull out of wash next time.
Made your recipe today. They look great and it was pretty easy but also had a weird baking soda taste to them. I followed the recipe to a T. Timed exactly 2 minutes and used exactly 2 C water with 6 TBSP baking soda. Wondering what i can do to not get that taste. My kids still want to eat them but I can’t gag down the baking soda.
Hmm, I don’t understand why this is happening to so many people! I have made these numerous times along with some readers in the comments below with no issues – very frustrating! I’m very sorry that this happened to your pretzels and I am going to edit the recipe to have the baking soda read 4 tablespoons instead of 6, that will get rid of the baking soda after-taste that you guys are getting and still be enough to give the pretzels a beautiful brown color. Again, I’m very sorry and I hope you give these pretzels another chance because they are so delicious!

I love the soft pretzels at the mall, and the cinnamon sugar ones are a really good dipped in a chocolate fudge dip. Be sure and try that when you make them. I’m going to try your recipe, I have grandchildren who love getting soft pretzels at the mall. Now they will love it when Grammy makes them!

These are beautiful! I’ve tried baking pretzels with varying success but I haven’t given up yet. I’ve never seen a recipe that specified turning off the water after it came to a boil. As I think this is the step where I usually mess up (I think the water boils off and creates a stronger baking soda taste) I’m excited to give this method of cooled water a try. 🙂 I’ll be attempting some pretzel “bites.” Wish me luck!

What if you do not have a stand mixer?
You can absolutely make it by hand. Add ingredients to a large bowl as they are stated in the instructions for a stand mixer and instead stir with a spoon until a dough forms. Flour your hands and a surface very well and knead the heck out of it! Prepare for an arm workout. 🙂

I’m dutch and I found your recipe on pinterest. I made just half the recipe this afternoon, but after I tasted these i regret making half the recipe. They are delicious. I put some garlic, smoked pepper, chili powder and parmesan cheese to make a pizza topping and they’re even better than the ‘normal’. I’m actally making these agian tomorrow =)

Thank you for this recipe! These are better than mall pretzels. I have tried several different soft pretzel recipes that involve long rising times and they were no where close to the fluffy insides/browned outsides that these have. I love them! I made myself sick eating 4 of them!
Aren’t you cute: “…but will keep for 2 days…” In December 2015 I stayed 5 weeks with my son and dil for the birth of their second child. Her mom was with us, too. I made one batch as Pretzel Balls and they were gone in no time. Hubby joined us for my last 10 days there. I made 2 DOUBLE batches (of the ball shapes) while he was with us. IF there were any left 24 hours later it was because my husband and son disciplined themselves harshly to leave a few “for later”! These are absolutely delightful. Later, back at home, I made them in pretzel stick shapes with vanilla added to the dough and rolled them in cinnamon sugar for backing. I have been instructed by my children that I could make these every day! Thank you so much for sharing the recipe!

I just made these today for my grand kids after school snack. I have to say, I have made pretzels before and I have put them in the boiling soda water for about 30 sec so was concerned that these were a little different. Well let me tell you, THIS is the way I’m doing them now! Ok I have to be honest, I have a terrible head cold so I can’t taste or smell… but my husband can’t stay out of them. I was having some serious PMS cravings and this was the first recipe that popped up on Pinterest in my search for soft pretzels. I had another recipe that I really wasn’t fond of – it was a lot of work and the pretzels never tasted right. Whipped these up in about 45 minutes and enjoyed (gasp) TWO of them for lunch with homemade cheese sauce. I have not tried freezing them, but I did a little research for you and it looks like the best method to do this is to bake them the full amount of time, cool completely and freeze. I would place them all separated on a parchment-lined baking sheet first and allow them to freeze completely individually before sticking them in a freezer bag so they don’t stick together. Thaw them and reheat in the oven at 400 degrees. Let me now if you try it out!
I tried this recipe and it turned out amazing!!! Whenever i have the craving for a pretzel i can just pull one out of the frezer and heat it up!! The pretzels are both delicious right out of the oven or reheated!!! I will definatly be using this recipe in the future!!❤️

Hi I would love to make these today, however I don’t have a stand mixer with hook attachment all I have is a small handheld electric mixer. Would that work or even just a fork to beat it

This is an easy fantastic recipe!!!!! I have tried to make pretzel’s before and they were very dense and dry, this recipe is the bomb!!!!!!! Taste like the pretzel’s you get at mall!!! What is the purpose of soaking them in the warm baking soda water for 2 min before baking???? They stuck to the was paper out of the oven should I have sprayed with cooking spray first????? Hey Tracie, I’m so happy you loved these pretzels!! 🙂 Soaking them in the warm backing soda bath gives the pretzels that nice golden brown chewy crust on the outside. As for the sticking, was that a typo and you meant to type wax? If so, you never, ever want to use wax paper in the oven. That is the reason they stuck. Use parchment paper instead – no need to grease it, they will just pop off. Hope this helped!
I have made this recipe about 9 billion times now, and it is the best I have found! They freeze well (when there is any left over) and it is seriously an “oops proof” recipe. For those of you who are wondering, as long as you get the ingredients and portions correct, these will turn out just fine. Its my go to for slumber parties, football games, and my job working 12 hour shifts. Thank you sooooooo sooooooo much!

Sorry about the late reply! A hand mixer wouldn’t work very well, I would probably just use your hands in a large bowl.
