It's slow cooker comfort food season you guys (almost), and boy have I got a delicious recipe for you guys! It's dessert.. made in a slow cooker.. that you set and forget. Dessert can't get any easier than this! One of my favorite desserts {ever ever ever} is a warm, gooey brownie topped with vanilla ice cream. There are tons and tons of recipes for lava CAKES that use cake mix made in the slow cooker, but not many for lava brownies using brownie mix. One gloomy afternoon I totally had a hankering for my favorite dessert - mentioned above ^ - and low and behold, this slow cooker brownie pudding was born!
You only need a few ingredients to get this going. Your favorite brownie mix - I like to use Ghirardelli mixes, the one with the ridiculous fudge packet in it is my favorite - pudding mix, chocolate chips and the ingredients that are required for both packages.
Start this recipe before dinner and by the time you're ready for dessert you'll be set to dig in!
Slow Cooker Brownie Pudding
Ingredients
- 1 box brownie mix + ingredients on box
- 1 3.4 oz dark chocolate pudding mix regular chocolate is fine too
- 1 ½ cups semi-sweet chocolate chips
Instructions
- Spray your slow cooker very well with non-stick cooking spray and set to high.
- In a large bowl, mix up brownie mix with ingredients required on box until smooth. Pour into slow cooker.
- In another bowl, whisk together pudding mix and milk. Allow to thicken up slightly and dump into slow cooker on top of cake mix, do not stir but spread it out a bit with a rubber spatula. Sprinkle with chocolate chips. Cook on high for 2-3 hours. Brownie pudding is done once the edges are set - the center will NOT be done, it will be gooey from the pudding so you must test done-ness on the edges.
- Serve warm with a big scoop of vanilla ice cream, if desired! It's totally necessary.
